Mixed Fried Rice Recipe

Ingredients
  • 2 cup rice (preferably basmati)
  • 2 cup capsicum, diced
  • 2 cup onions, diced
  • 8-10 baby corn, diced
  • 1 cup carrot, grated
  • 1/2 cup green peas
  • 1 inch piece of ginger, chopped
  • 5-6 garlic, chopped
  • 1/2 tsp red chilli powder
  • 1/2 tsp coriander powder
  • 1/2 tsp cumin seeds (jeera)
  • 1/2 tsp pepper powder
  • Water as required
  • Salt to taste
  • Oil as required


Instructions
  • Soak rice for 20mins. Cook it in 4 cups of water.
  • In water add a pinch of salt and turmeric powder to cook baby corn, but don’t over cook.
  • Take a pan heat the oil add cumin seeds, ginger, garlic, onion, capsicum, baby corns, carrot, green peas and fry it.
  • Add red chilli powder, coriander powder, pepper powder and salt.
  • Now mix it with cooked rice.
  • You can have them hot with raita and papad of your choice.
